Ingredients
For the Popcorn Base:
10 cups plain popped popcorn (about ½ cup kernels)
1 cup finely chopped dill pickles (well-drained, patted dry)
¼ cup dill pickle brine
For the Coating:
1 cup granulated sugar
½ cup light corn syrup
¼ cup unsalted butter
½ teaspoon kosher salt
1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Popcorn
Pop about ½ cup popcorn kernels to make 10 cups popped popcorn.
Pour into a large mixing bowl.
Add the finely chopped dill pickles and drizzle the pickle brine over the popcorn.
Toss gently to coat evenly.
Step 2: Make the Coating
In a medium saucepan, combine sugar, corn syrup, butter, and salt.
Heat over medium heat, stirring constantly until the mixture begins to bubble.
Continue cooking for 2–3 minutes until smooth and glossy.
Remove from heat and stir in vanilla extract.
Step 3: Combine & Shape
Quickly pour the hot mixture over the popcorn and pickles.
Stir carefully with a spatula until all popcorn is coated.
Let the mixture cool slightly (enough to handle).
Grease your hands lightly with butter and shape into balls about 2–3 inches in diameter.
Step 4: Set & Serve
Place popcorn balls on wax paper or parchment to cool completely.
Once firm, store in an airtight container at room temperature.
